Most of these recipes are vegan. Feel free to swap out your protein of choice, of course!
Avocado Toast
Lightly toas bread of your choice (multi grain pictured)
Smash 1/2 an avocado and spread over the toast
Season with everything bagel & siracha (to taste)
Add 1 oz (about 1/3 container) microgreens (crunchy mix pictured)
Crumble cheese of your choice
Add a handful of cherry tomatoes
Enjoy!

Spring Salad
Taco Grain Bowl
Start your rice while you cook everything else (Make about 1 cup of rice of your choice.)
Cook 1/4 lb ground meat of your choice and season with taco seasoning of your choice (I use old el paso. You can also substitute a vegan option, like the tofu pictured here!
Lightly sauté 1 small onion (chopped) and 1/2 avocado (chopped)
Add 1 oz each black beans and canned corn (cooked or straight out of the can.)
Add 1/4 diced tomato
Top with salsa of choice and microgreens (cilantro pictured!)
Mushroom & Asparagus Stir Fry

Blanch the apsaragus and jicima until tender
Add 1 Tbsp oil or butter to a frying pan at medium heat until glistening
Add shallot and cook until carmelized, about 2 minutes
Add mushrooms and cook until tender, about 3 minutes.
Add Jicima and Asparagus and cook until heated, about 2 minutes.
Add Stir Fry greens and heat until barely wilted, about 1 minute
Add lemon juice and soy sauce. Stir until mixed

Easy Chicken Tortilla Soup
Put chicken and diced tomatoes into slow cooker and heat on high for 4 hours.
Take chicken out and shred.
Return chicken to pot. Add beans and corn. If desired, drain beans and corn and replace liquid (about 1 cup) with chicken stock.
Season to taste (about 1 packet of taco seasoning. I buy it in a shaker so I can add as much as I like!)
Cook for 1 hour. Add microgreens for the last 5 minutes.
Ladel into bowl(s.) Top with any or all of the remaining ingredients. Enjoy!
