All recipes pictured on this page were created using our microgreens! (They're not just photos we grabbed off the internet 😉

Most of these recipes are vegan.  Feel free to swap out your protein of choice, of course!

Avocado Toast

  • Toast (it's in the name!)
  • Avocado (also in the name...)
  • Everything bagel seasoning
  • Sriracha
  • Herbed Goat Cheese
  • Cherry Tomatoes
  • Supercharged with our Crunchy Microgreen Mix!

Lightly toas bread of your choice (multi grain pictured)

Smash 1/2 an avocado and spread over the toast

Season with everything bagel & siracha (to taste)

Add 1 oz (about 1/3 container) microgreens (crunchy mix pictured)

Crumble cheese of your choice

Add a handful of cherry tomatoes

Enjoy!

Berry Smoothie

  • 1 cup Greek Yogurt
  • 1/2 cup frozen berries (raspberry/blueberry mix pictured)
  • 1/2 - 1 oz microgreens of your choice
  • Blend until smooth

  • Baby greens spring mix
  • 1/2 Avocado, sliced (can you tell our chef likes avocado?)
  • Cherry Tomatoes
  • Herbed Goat Cheese
  • Supercharged with our Crunchy Microgreens Mix!
  • Caesar or your dressing of choice

Taco Grain Bowl

  • Rice
  • Seasoned Taco meat (hamburger or turkey burger)  (Tofu Pictured)
  • Corn (or Sweet Potato, as pictured)
  • Black Beans
  • Red Onion
  • Avocado
  • Diced Tomatoes
  • Your Salsa of Choice
  • Top with Cliantro Microgreens!

Start your rice while you cook everything else (Make about 1 cup of rice of your choice.)

Cook 1/4 lb ground meat of your choice and season with taco seasoning of your choice (I use old el paso.  You can also substitute a vegan option, like the tofu pictured here!

Lightly sauté 1 small onion (chopped) and 1/2 avocado (chopped)

Add 1 oz each black beans and canned corn (cooked or straight out of the can.)

Add 1/4 diced tomato

Top with salsa of choice and microgreens (cilantro pictured!)

Mushroom & Asparagus Stir Fry

  • 4 Stalks Asparagus
  • About 2 dozen Jicima Sticks
  • 1 oz each Lion's Mane and Morel Mushrooms
  • 1 oz Shitake Jerkey
  • 1 teaspoon Lemon Juice
  • 2 teaspoons  low sodium Soy Sauce
  • 1 Shallot, Diced
  • 1 oz Stir Fry Greens

Blanch the apsaragus and jicima until tender

Add 1 Tbsp oil or butter to a frying pan at medium heat until glistening

Add shallot and cook until carmelized, about 2 minutes

Add mushrooms and cook until tender, about 3 minutes.

Add Jicima and Asparagus and cook until heated, about 2 minutes.

Add Stir Fry greens and heat until barely wilted, about 1 minute

Add lemon juice and soy sauce.  Stir until mixed

Enjoy!

  • 2 eggs, cooked to your liking (fried over hard pictured)
  • 2 slices of tomato
  • Everything bagel seasoning
  • Top with greens of your choice (basil pictured)

Souped Up Pasta Salad

Another great recipe from Joyce!

  • 1 cup pasta of your choice (Rotini Pictured.)  We used Betty Crocker "Suddenly Salad" as our base.
  • 1-2 morel mushrooms, chopped
  • 1 small onion, chopped
  • 1/2 small tomato, chopped
  • 1oz lemon basil, chopped
  • 1-2 oz microgreens, chopped (we used immunity mix here)
  • 1-2 oz lion's mane mushrooms, chopped (we used dehydrated, and re-hydrated them in the seasoning that came with the pasta.)
  • Dressing of choice (we used the seasoning that came with the pasta.)

  • Bacon or bacon substitute (tempeh pictured)

Easy Baked Potato

  • Bake a potato (or even microwave it!)
  • Cut your potato open and mash it a bit
  • Add your choice of butter (or substitute) and/or sour cream
  • Salt and pepper to taste
  • Top with microgreens (Crunchy mix pictured)

  • Baby Spinach

  • Bacon (vegan bacon pictured)

Easy Chicken Tortilla Soup

  • 1 lb chicken (leave out for a vegetarian option.)
  • 1 can diced tomatoes
  • 1 can corn
  • 2 cans beans (your choice!  I usually use 1 black bean and 1 red bean.)
  • Taco seasoning (I use Old El Paso)
  • Tortilla chips or strips
  • Shredded cheese
  • Supercharged with our Crunchy Microgreens Mix!
  • (Optional) 1 jalapeno, diced (or about 1 Tbsp pickled jalapeno)
  • (Optional) micro cilantro
  • (Optional) Avocado 

Put chicken and diced tomatoes into slow cooker and heat on high for 4 hours.

Take chicken out and shred. 

Return chicken to pot.  Add beans and corn.  If desired, drain beans and corn and replace liquid (about 1 cup) with chicken stock.

Season to taste (about 1 packet of taco seasoning.  I buy it in a shaker so I can add as much as I like!)

Cook for 1 hour.  Add microgreens for the last 5 minutes.

Ladel into bowl(s.)  Top with any or all of the remaining ingredients.  Enjoy!
